CASADA RICOTTA RECIPE (this is cannoli filling w/o cannoli shells)

Casada Trifle Recipe for a Crowd
Divide by three for a smaller recipe

3 1lb Whole Milk Ricotta Cheese
1 heaping cup of confectioners sugar
2 tsp cinnamon
2 tsp almond extract
2 tsp vanilla extract

16 oz heavy cream

3/4 cup chopped walnuts
1 jar maraschino cherries, drained well & quartered
Thin milk & dark chocolate bars chopped into small pieces

1-2 angel food cakes, torn in to pieces
I usually make the filling the day before which lets the flavors blend together.

Combine first five ingredients beating until mixed well.
In a separate bowl beat heavy cream and fold into cheese mixture.
Stir in nuts, cherries & chocolate pieces.
In a large clear bowl layer torn pieces of cake, cover cake with cheese mixture & repeat. Top with curled chocolate shavings.
Garnish sides with strawberries.
