Carrot cake recipe
*ingredients:
6 c grated carrots
1 c brown sugar
1 c raisins
4 eggs
1 1/2 cups white sugar
1 c vegetable oil
2 t of vanilla extract
1 cup crushed pineapple, drained
3 cups of all-purpose flour
1 1/2 teaspoons of baking soda
1 t salt
4 t cinnamon
1 c chopped walnuts
*Directions:
In a medium bowl, combine the grated carrot and brown sugar
Set aside for 60 minutes, stir in the raisins
Preheat oven 350°F
Grease & flour 2 10-inch cake pans
In a large bowl, whisk the eggs & beat in sugar, oil, vanilla & pineapple
Combine flour, baking soda, salt and cinnamon, stir into wet mixture
Add the carrot and walnut mixture
Pour evenly into prepared cake pans
Bake for 45 to 50 minutes in the preheated oven or until tests with a toothpick comes clean
Cool for 10 min before removing from pan
Frost when completely cooled with cream cheese frosting
