BEAN SAUSAGE & ESCAROLE SOUP

32 oz carton of low fat low salt chicken broth

ADD :  1 bunch of escarole, rinsed & chopped

1 cut up cook mild sausage

1 cup Ditalini macaroni

2-3 whole garlic cloves

Bring to a boil & simmer for approx 20-30 minutes until macaroni is cooked

Serve with grated Pecorino cheese & fresh Italian bread
