THUMBPRINT COOKIES

3 sticks softened butter

1 cup sugar

1 tsp vanilla

3 1/2 cups flour

1 egg beaten w/ 1 Tbls water, for egg wash

7 ounces sweetened coconut

Raspberry, apricot, peach or any jam

Preheat oven to 350 F degrees

Beat butter & sugar until creamy, add rest of ingredients

Mix until dough starts to come together

Roll into 1 inch balls, dip in egg wash, roll into coconut

Place on ungreased cookie sheet

Make a small indentation in center of each cookie & add  1/4 tsp jam

Bake 15-20 min or until coconut is golden brown.
