Topping:
2 T butter
1/2 cup brown sugar
6 pineapple rings
1/2 cup chopped pecans
Melt fat in a 9 ” cake pan over low heat
Sprinkle brown sugar over fat & arrange fruit & nuts in sugar mixture
Cake:
3 T softened butter
1/2 cup sugar
1 egg
1 cup flour
1 1/4 t baking powder
1/4 t salt
1/3 cup milk
1/4 t vanilla
Mix 3 T butter with sugar, add egg & beat until creamy.
Mix flour, baking powder & salt thoroughly; add to sugar mixture alternately with milk, add vanilla
Spread batter evenly over topping mixture, above
Bake at 350 degree preheated oven for approximately 25-30 min
Turn over on a serving dish when cooled
