BLACK BEAN SOUP

1 1/2 T evoo
Sauté 1/2 med chopped onion
1 sweet red pepper
3 minced garlic
1 t cumin
1 t coriander
1 t ground cayenne pepper
1 T red wine vinegar
2 1/2 cans drained black beans
1 container 15.5 oz chicken or vegetable stock
S & P to taste
To smash about 1/4 pot of beans & put back in the soup to make thicker
